1. Cow to Dairy Farm
The process begins with dairy cows. Milk is collected from farms and cold-transported in large, refrigerated tankers to a manufacturing or cheese-processing facility. At this stage, the milk is about 3.5% protein, 4% fat, and 4.8% lactose.
2. Pasteurization and Coagulation
.Once at the facility, the milk undergoes pasteurization (rapid heating and cooling) to kill any harmful bacteria.
Next, enzymes (like rennet) or acids are added to the milk to initiate the cheesemaking process. This causes the milk to curdle and separate into two distinct parts:
Curds (Solids): These float to the top and are used to make cheese.
Whey (Liquid): The watery liquid left behind at the bottom. This liquid contains water, lactose, vitamins, minerals, and about 20% of the original milk’s protein.
3. Microfiltration (Concentration)
The liquid whey is drained away from the cheese curds. At this point, it is still mostly water. To turn it into a high-protein supplement, it undergoes intense microfiltration through porous membranes.
This mechanical process filters out most of the fats, carbohydrates, and lactose, concentrating the protein.
4. Evaporation and Spray Drying
The concentrated liquid whey is then sent to an evaporator, which removes most of the remaining water, leaving behind a highly dense protein liquid.
To turn this liquid into a shelf-stable powder, it undergoes spray drying. The liquid is sprayed into a high-temperature tower where hot air instantly evaporates the remaining moisture, causing droplets to fall to the bottom as a fine, dry powder.
5. Refining the Final Product
At this point, you have raw, unflavored whey protein. Depending on how it is processed next, it becomes one of three main types:
